Yummy Butterscotch Oatmeal Cookies

Oatmeal Butterscotch Cookies

3/4 cup of soft butter                    3/4 cup Organic Sugar
3/4 cup of Organic Brown sugar      2 Free Range Eggs
1 teaspoon of Vanilla                     1 teaspoon baking soda
1/2 teaspoon cinnamon                1/2 teaspoon salt
 3 cups of oatmeal                       1 2/3 cups of butterscotch chips
1 1/4 cup of all-purpose flour

TO MAKE GLUTEN FREE COOKIES:
substitute: GF certified oats for regular oatmeal, use GF vanilla, use Tom Sawyer GF flour blend for all purpose flour, and use Guittard Butterscotch Chips.

Preheat oven to 375

Beat sugars, butter together, than add eggs and vanilla. Mix dry ingredients in a seperate bowl. Gradually add dry ingredients and mix ( I usually do this by hand but not necessary). Last hand mix in the oats and the chips.  Drop by the spoonfuls on an ungreased cookie sheet and bake for 8 to 10 minutes.
